In a mortar and pastel grind one green cardamom, a small piece of cinnamon and black cardamom.


Once the pressure is settled down or the mutton is cooked well, open the cooker/remove the lid and add in the cardamom powder, chopped coriander leaves and mix well.Cover the cooker/pan and cook for 2-3 whistles or until the mutton is cooked well on low heat. Now add in the green chillies, water and mix well.Add in the chopped tomatoes and saute until the tomatoes are mashed well.

Then add in the turmeric powder, coriander powder, chilli powder, garam masala and fry for 1 minute on low heat.Mix well and saute until the onions are mashed well and starts to brown. Once the water/juice evaporates completely and the meat starts browning, add in the chopped onions, remaining ginger, garlic and salt.This step will take some time First you can see the water/juice coming out of the meat, then it will start to brown. Add in the washed mutton pieces and cook until the mutton pieces starts to brown on low-medium heat.Add in half of the chopped garlic and ginger and fry till the raw smell disappears.Heat oil in a pressure cooker/pan, add in the bay leaves, cloves and cinnamon and fry for few seconds.Clean and wash the mutton pieces and drain the water completely.
